Topside Bresaola

From beef legs we choose the topside-core, the most prized cut of meat.

Gently and carefully processing the raw meat, then letting it mature in dry and airy chambers, as it is unique to our valley, thus we get a lean product, almost veinfree and marked by its typical red colour.

As its slices look regular and the whole cut has a cylindrical shape, it proves to be very suitable for slicing and retail sales.
