Salumificio Mottolini was established in 1986 by Michele Mottolini and his passion for one of the most delicious resources of our valley: the Bresaola. His enthusiasm and dedication have created a very special product, unique in its taste and high quality, beloved by customers. Since the beginning, He wanted to follow out all the processing operations, from the selection of best suppliers to the standing over of main preparation-stages: the first cutting and cleaning operations, the salting process and also the careful maturation.
